Goat Milk

More of the world's people consume goat milk than cow milk. A dairy goat is much easier to raise and adapts to a wider variety of environments than a dairy cow. Goat milk is naturally homogenized. Goat milk contains a less lactose than cow's milk and is less likely to trigger lactose intolerance. Goat's milk is more easily digested and less likely to cause irritability. The digestibility of goat milk can be attributed to its casein curd, which is both softer and smaller than is cow's milk. Infants below the age of one year should not be fed goat milk or cow milk. Goat Milk Ice Cream

You can find goat milk ice cream in health food stores and some grocery stores.  We’ve tried Laloo's goat’s milk ice cream which comes in a variety of flavors.

 

Goat Cheese

Goat cheese is known as chèvre, after the French word for goat. Goat cheese is often higher in protein and lower in fat than cheese from cow’s milk

 

Here is a very simple recipe for making goat soft cheese: It does not use rennet but instead uses lemon juice to curdle the nilk.  It uses 1/2 gallon fresh goat milk (unpasteurized), the juice of two lemons, and sea salt).

 

  1. Heat milk on medium heat to 185°F 
  2. Remove from heat , then stir in lemon juice . Continue to stir for several minutes until milk has curdled 
  3. Add 1/2 tablespoon of coarse salt (kosher salt or sea salt)
  4. Strain milk through cheesecloth 
  5. Wrap curds in cheesecloth and hang (using a rubber band works well) in the refrigerator to drain  for 4-8 hours

 

This soft goat cheese is great on crackers or added to a salad or pasta/

Goat Milk Soap

Goat’s milk is a common ingredient in soap.  Goat milk adds creaminess, vitamins, minerals and proteins to soap.  Be careful when making your own goat’s milk soap because most recipes you find use lye.
